Flash pasteurisation or as some people prefer to call it “product stabilisation” is key for product integrity and Enterprise Tondelli have a great deal of experience in this area. We have pasteurised syrup concentrates , beer, fruit juices, ciders and milk products.
The simplest flash pasteurises are plate type heat exchanger and holding tubes on a skid. However this will waste a lot of product and time unless a recirculation circuit is included to keep the plates sanitary and hot. To save energy typically the incoming product is heated up by the pasteurised product returning from the holding tubes. If sized correctly up to 95% energy can be recovered in this way to make the running of the unit more efficient
Many products can be pasteurised by using plate type heat exchanger to heat up the product with some pulpy products requiring wide gap heat exchangers. However some juices for instance would require a tubular heat exchanger as the gap between the heat exchanger plates would simply be not wide enough to prevent product burning or build up on the plates.
Attention is taken to the pressures of the various pumps on the skid to ensure that no unpasteurised product can leak into pasteurised product as a HazOp fail safe. A sterile buffer holding tank is often fitted at the end of the pasteuriser to avoid too many stoppages to the unit and prevent it from going into recirculation. Additionally the us of a variable flow pasteuriser can reduce further the number of stoppages by changing the temperature in relation to the flow rate yet still keeping the same PU’s.
Units are usually skid mounted to make installation quicker and easier.
